Warm Tomato Salsa
This simple dish makes tasty accompaniment to meat dishes, particularly fish, and is the perfect use for bumper summer produce.
4 large or 6 medium home-grown tomatoes, diced
2 yellow banana capsicums, diced
1 large onion of your choice, diced
1 clove garlic, chopped
Good quality olive oil
1 tablespoon white wine vinegar
Honey or brown sugar to taste
Freshly ground salt and pepper to taste
Shredded basil to serve
Combine white wine vinegar, honey, freshly cracked salt/pepper and olive oil to taste. Set aside.
Drizzle olive oil into hot pan, cooking capsicum, onion and garlic until translucent.
Reducing heat, add tomato and cook until warmed through.
Add white wine dressing, stirring gently to combine.
Serve with shredded basil - both Thai and Sweet varieties work well.
