Tabouleh-inspired Barley Salad
Aside from drying and freezing for later use, these herbs are great eaten fresh. I have included a Tabouleh-inspired barley salad below.
1 bunch of mint (leaves only), chopped
1 bunch of parsley, chopped
½ cup (or more) chopped sundried tomatoes
1 small red onion, finely chopped
½ cup good quality olive oil
½ cup lemon juice
2.5 cups Barley
1 cup lightly toasted cashews
Salt and pepper to taste
Cook barley as per packet directions and set aside to cool.
Combine all other ingredients and add to barley.
Season with salt and pepper and drizzle with olive oil.
