Tabouleh-inspired Barley Salad
Aside from drying and freezing for later use, these herbs are great eaten fresh. I have included a Tabouleh-inspired barley salad below. Ingredients: 1 bunch of mint (leaves only), chopped 1 bunch of parsley, chopped ½ cup (or more) chopped sundried tomatoes 1 small red onion, finely chopped ½ cup good quality olive oil ½ cup lemon juice 2.5 cups Barley 1 cup lightly toasted cashews Salt and pepper to taste Method: Cook barley as per packet directions and set aside to cool. Combine all other ingredients and add to barley. Season with salt and pepper and drizzle with olive oil. |
