Barbara’s Passionfruit Muffins
Adapted from Joy of Cooking (1974 edition) Ingredients: 1.5 cups plain flour, sifted ½ cup processed rolled oats ½ cup shredded coconut 2 tbsp sugar 1 tsp baking powder ½ tsp bi-carb soda Pinch of salt 1 cup buttermilk 1 egg, lightly beaten 3 tbsp melted butter ½ cup passionfruit pulp Method: Combine dry ingredients. Combine liquid ingredients. Make well in centre of dry ingredients, add liquid ingredients and fold through, taking care not to over mix. Spoon mixture into muffin tin and cook in pre-heated oven at 190C for approximately 20 minutes until golden. Makes 6 jumbo muffins. |
